THE TEAM

The coach plays a crucial role in mentoring the candidate, providing guidance, motivation, and strategic insights both in preparation and on competition day. Håvard Werkland selected Christopher W. Davidsen, a trusted mentor and former teammate, to be his coach, knowing his experience and understanding of competition. Their strong partnership, built over years of working together, allows for seamless collaboration. With commis Grunde Gillund completing the trio, Håvard has assembled a focused and ambitious team, aiming to achieve top honors at the Bocuse d’Or.

The role of a commis, a young chef under 23, is vital in the Bocuse d’Or competition, working closely with the candidate to prepare and present dishes under intense time pressure. Håvard Werkland has chosen Grunde Gillund, a talented chef he trusts, to be his commis, valuing their strong partnership. Grunde has already proven himself in competitions, with a desire to be the best. Being a commis is a unique training ground, as many go on to compete in Bocuse d'Or themselves, contributing to Norway’s legacy in the culinary world.

Håvard Werkland’s culinary journey began unexpectedly, from limited local options and a passion for gaming to becoming a top chef. His dedication saw him through an apprenticeship at Rica Nidelven, where he met mentor Christopher W. Davidsen, leading to wins in national competitions. Their partnership brought him to the Bocuse d'Or, where they won silver in 2017. Now, as assistant head chef at Michelin-starred Speilsalen, Håvard holds the title of Chef of the Year 2023 and a coveted ticket to the prestigious Bocuse d'Or competition.

Competetions

Chef of the Year – The national selection (every March in odd-numbered years)

Chef of the Year is Norway's most important culinary competition and is held every other year. Here, the country's most skilled chefs compete to become Norway's representative in the Bocuse d’Or Europe and Bocuse d’Or.

Bocuse d’Or Europe – The European Championship (second quarter in even-numbered years)

The winner of "Chef of the Year" represents Norway in the Bocuse d’Or Europe, where 20 of Europe’s best chefs gather. The top 10 chefs qualify directly for the world championship of culinary arts, the Bocuse d’Or, held in Lyon.

Bocuse d’Or Lyon – The World Championship (end of January in odd-numbered years)

In the grand world final, 24 of the world’s best chefs compete over two days. The candidates have gone through a national selection and advanced from regional championships in their part of the world—Europe, Asia, Africa, or the Americas.

The winner of the Bocuse d’Or receives a Bocuse trophy, a place in the prestigious Bocuse d’Or Winner's Academy, and a cash prize.
